Oven-Baked Beef
To prepare a delicious oven-roasted meat leg, we start by ensuring that the leg is well portioned. This will allow for even cooking and more effective marinating. After portioning the leg, we gently pound it with a meat mallet, which will help tenderize the meat. Then, we sprinkle salt and pepper on each piece, making sure the flavors will absorb well.
The next step is to prepare the baking tray. We pour a generous amount of oil into the tray and arrange the pieces of leg evenly. We add two glasses of water to create a humid environment that will help cook the meat by steaming it. We cover the tray with aluminum foil, which will retain moisture and prevent the meat from drying out, and place it in the preheated oven at 180 degrees Celsius.
After about 20 minutes, we carefully remove the aluminum foil and pour a glass of white wine over the meat. The wine will add a note of acidity and intensify the flavors, continuing to steam. In the meantime, we prepare the potato garnish. We peel the potatoes and cut them into larger pieces to ensure they cook evenly.
We add the potatoes to the tray over the meat leg and, if necessary, add water until all the ingredients are covered. This step is essential to ensure that both the meat and potatoes will cook and absorb the flavors from the sauce.
In a separate bowl, we mix the mustard with the flour, trying to obtain a smooth paste. This mixture will help thicken the sauce that has formed in the tray. We thin the paste with the sauce from the tray, mixing well, and if needed, we can add a cup of water to achieve the desired consistency. We strain this flavorful sauce over the meat leg and potatoes, ensuring everything is evenly covered. After this stage, we put the tray back in the oven for another 10 minutes, until the sauce becomes thick and the flavors blend perfectly.
