Discover a delicious and healthy recipe for spinach and salmon buns, perfect for a quick lunch or a light dinner. These buns are not only tasty but also packed with nutrients, featuring a soft and flavorful dough that perfectly envelops the spinach and salmon filling. Here’s how to achieve a perfect result, step by step.

Ingredients:

For the dough:
- 500 g wheat flour
- 200 g fine semolina
- 7 g dry yeast
- 300 ml lukewarm water
- 1 teaspoon sugar
- 1 teaspoon salt
- 2 tablespoons olive oil

For the filling:
- 300 g fresh spinach (or frozen)
- 200 g smoked salmon (or fresh)
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- Juice of 1/2 lemon
- Salt and pepper to taste
- 1 egg (for brushing)

Preparation:

1. Making the dough: In a large bowl, mix the wheat flour with the fine semolina, dry yeast, sugar, and salt. Gradually add lukewarm water while stirring with a wooden spoon. Once the ingredients start to combine, add the olive oil. Knead the dough for 10 minutes until it becomes elastic and smooth. Cover it with a damp towel and let it rise in a warm place for 30 minutes, or until it doubles in volume.

2. Preparing the filling: In a pan, heat a little olive oil and add the onion. Sauté until it becomes translucent, then add the garlic and spinach. If using frozen spinach, ensure it is thawed and well-drained. Cook the mixture for 5-7 minutes until the spinach wilts. Add lemon juice, salt, and pepper to taste. Let the filling cool slightly.

3. Assembling the buns: Preheat the oven to 200°C. On a floured surface, roll out the dough into thin sheets about 5 mm thick. Use a knife or a glass to cut out circles. On each circle, place a spoonful of the spinach filling and a few pieces of salmon. Fold the dough to seal the filling and shape it into a bun. Ensure the edges are well sealed.

4. Baking: Place the buns on a baking tray lined with parchment paper. Beat an egg and brush each bun to achieve a beautiful golden color when baked. Bake in the oven for 15-20 minutes, or until golden and fluffy.

5. Serving: Serve the buns warm, alongside a fresh salad or Greek yogurt. These buns can also be served as an appetizer at a party or a picnic.

Practical tip: You can experiment with other filling ingredients, such as feta cheese or olives, to add a Mediterranean flavor. You can also add spices like dill or cumin to enhance the flavors.

Enjoy these spinach and salmon buns, a simple and healthy dish that will surely impress anyone who tastes them!
