I don't know if ribs are in fashion in Romania, but here in Spain, they are extremely popular! I will share with you the recipe I used to prepare in industrial quantities at a restaurant. Ribs, or as we sometimes call them, are an excellent choice for a savory meal. The first step is to prepare them properly. If you buy them whole, make sure to cut them so that there isn't too much meat left on the sides. The ribs are cut into four pieces so that they can be easily served as individual portions.
After cutting them, you need to salt and pepper them well, then place them in a tray. Now, let’s take care of the sauce. In a bowl, mix the desired ingredients: soy sauce, honey, crushed garlic, vinegar, and spices to taste. If you find the meat too lean, feel free to add a tablespoon of olive oil or sunflower oil, depending on your preference. You can also add a little water or meat broth to enhance the flavor of the sauce. Pour this mixture over the ribs in the tray and cover with aluminum foil.
Put the tray in the oven at medium heat and check every 30 minutes, turning the ribs to brown them evenly. After the meat is well cooked, remove the foil and let the sauce thicken so that it remains sticky on the meat. In the meantime, prepare the potato side dish. If you are using new potatoes, wash them well; if they are older, peel them and cut them into quarters. Place them in the tray alongside the ribs, sprinkle them with spices such as rosemary, thyme, sweet paprika, and of course, salt and pepper. Also, add a little oil to give them a delicious flavor. Leave them in the oven, stirring occasionally, until they become golden and crispy.
A side of coleslaw salad perfectly complements this dish. Grate the carrot, slice the onion, and julienne the white cabbage, then mix them in a bowl. Add mayonnaise to taste, being careful not to soak the cabbage too much, as it will release water. The salad can be kept in the refrigerator for a few days, covered.
The spicy sauce is optional but extremely delicious. Use the leftover sauce from baking the ribs as a base, adding finely chopped chili peppers, whether you use fresh peppers or cayenne. 1.5 kg pork ribs, 1 onion, 150 ml sweet ketchup, 100 ml barbecue sauce*, 50 ml white vinegar, 2-3 tablespoons brown sugar, 2 tablespoons honey, 3 medium potatoes, thyme, rosemary, etc., half a white cabbage, 1 onion, 2 carrots, mayonnaise as needed. Sauce: 1 small to medium onion, finely chopped, 2-3 tablespoons brown sugar*, 2 tablespoons honey*, 150 g sweet ketchup, 150 g barbecue sauce**, white vinegar or malt vinegar about 50 ml (if you have 9 degrees, use less!)
