Ground Meat Sauce
This sauce, my dear ones, is a true delight, but also a challenge, as it requires patience and time. I prepare it with great passion, knowing that every minute of boiling adds depth and richness of flavors. I start by preparing the necessary ingredients, ensuring that everything is fresh and of quality. The meat will be the base of this wonderful sauce, so I choose carefully butchered beef cut into small cubes. In a large pot, I put four tablespoons of oil, and when it is well heated, I add the meat, finely chopped onion, and crushed garlic. Over medium heat, I stir constantly until the meat turns brown and begins to release its juices, and the onion becomes translucent.
Next comes the carrot, which I finely grate, adding it to the pot to sauté with the other ingredients. The sweet taste of the carrot will balance the savory flavors of the meat and vegetables. After a few minutes, I add the sliced leeks, whose aroma will give the sauce a fresh and inviting note. Here, the tomato paste comes in, enriching and coloring the sauce, giving it an appetizing appearance. Now, I reduce the heat to low, cover the pot, and let the sauce simmer for two hours. It is important to stir occasionally and add water to maintain the desired consistency.
After the two hours, my sauce is already a symphony of flavors. I now add the peeled tomatoes, along with the juice they were in, basil, and oregano. I season with salt, pepper, and a pinch of sugar, which will balance the acidity of the tomatoes. Then, I let everything boil with the lid covered for another hour or until the oil starts to separate on top, allowing the ingredients to settle nicely at the bottom.
At the end, it is time to taste the sauce and adjust it to your preferences. If you want to give it a thicker consistency, dissolve the starch in cold water and add it, letting the sauce boil a little longer. On hot summer days, I do not hesitate to add a handful of fresh basil and sometimes a bit of green parsley for a touch of freshness.
This sauce keeps excellently in the freezer, making it ideal for those moments when you need a quick and delicious meal. The time spent in the kitchen is not in vain, but a step towards enjoying a perfect lasagna or pizza. Happy cooking!
