It is essential to prepare all the vegetables and ingredients before you start cooking, to facilitate the process and avoid any inconveniences. In a medium-sized pot, bring water with a little salt to a boil. This will be used to cook the pasta, so make sure it is already on the heat.

Meanwhile, in a larger skillet, add olive oil and turn the heat to low to medium. Add the finely chopped cabbage and grated carrots, letting them sauté for about five minutes. This step will help develop the flavors and soften the vegetables. After five minutes, add the chopped green onions and zucchini, continuing to cook the mixture for another five minutes until all the vegetables become tender and slightly caramelized.

In the meantime, in a separate saucepan, put all the ingredients for the sauce, except for the flour, and let them heat over low heat. Stir occasionally, and when the sugar has completely melted and the sauce becomes hot, gradually add the flour, whisking vigorously to avoid lumps. This step is crucial to achieve a smooth and homogeneous sauce texture.

Once the sauce is ready, add the pieces of chili pepper, finely chopped garlic, and fresh coriander to the skillet with the vegetables. Mix everything well and let it sauté for another two minutes for the flavors to combine perfectly. During this time, put the pasta in the boiling water and cook it al dente, according to the package instructions (about 2-3 minutes if homemade).

After the pasta is cooked, add the broccoli florets to the hot sauce, letting them cook for 3-4 minutes to soften but still keeping a crunchy texture. After the four minutes have passed, remove the saucepan from the heat and let the ingredients cool slightly.

Finally, drain the cooked pasta and assemble all the ingredients in a large skillet. Mix well to allow the sauce to coat all the vegetables and pasta, and then portion onto plates.
