In a spacious bowl, we start by adding a large tablespoon of sugar, which will bring a touch of sweetness to our dish. Along with the sugar, we add a teaspoon of salt, which will enhance the flavors and help preserve the peppers. These two ingredients will combine perfectly with the two cloves of garlic, which we will finely grate on a small grater or, if you prefer, you can crush them using a garlic press. The unmistakable taste of fresh garlic will add extra flavor to our dish.

After adding the garlic, we carefully pour 100 ml of oil over our mixture, ideally it should be extra virgin olive oil, to bring a flavorful note and a perfect taste. We continue with 50 ml of vinegar, preferably wine or apple vinegar, which will provide a pleasant contrast between the sweetness of the sugar and the saltiness of the salt. We mix everything with a wooden spoon, ensuring that the sugar and salt dissolve well in this aromatic dressing.

Once we have obtained a homogeneous solution, it's time to add the roasted and peeled kapia peppers, which can be fresh or, if you choose the more practical option, thawed peppers. It's important that the peppers are cut into suitable strips or left whole, depending on your preferences. Once the peppers are in the bowl, we gently toss them in the prepared dressing, ensuring that each strip of pepper is well coated with this mix of flavors.

We let it marinate for at least 30 minutes. This waiting time is essential as it allows the peppers to absorb all the flavors of the dressing, transforming into a delicious snack, perfect to be served as an appetizer or accompaniment to various dishes. After this interval, the peppers can be served with pleasure, alongside a slice of fresh bread or as part of a salad. Enjoy your meal!
