To prepare a delicious recipe of pasta with tuna and tomatoes, start by bringing 1 liter of water to a boil in a large pot. Add 1-2 tablespoons of salt to the water to enhance the flavor of the pasta. When the water starts to boil vigorously, add the pasta. It is important to boil them according to the instructions on the package, usually between 8 and 12 minutes, depending on the type of pasta used. After boiling, remove the pasta from the heat, drain well, and cover with a lid to keep warm.

Meanwhile, prepare the sauce. In a large skillet, add a few tablespoons of olive oil and heat it over medium heat. Peel 2 cloves of garlic, crush them lightly with the blade of a knife, and add them to the skillet. Sauté them for 1-2 minutes until they turn golden and release their aroma, then remove them from the skillet and set aside for later use.

In the same skillet, add a chili pepper, seeded and sliced thinly. Sauté the pepper in the garlic-flavored oil for a few minutes until it becomes soft and slightly browned. Remove the pepper from the skillet and add the can of tuna, drained of oil. Sauté the tuna for 2-3 minutes, stirring occasionally to lightly brown it.

Once the tuna is sautéed, add 400 grams of diced tomatoes (peeled) to the skillet. Let the sauce simmer on low heat, stirring occasionally, until it reduces and becomes more concentrated. This process may take about 5-7 minutes. Taste the sauce and adjust the salt, adding a teaspoon of sugar if it is too sour.

Once the sauce is ready, take the boiled and drained pasta and add it to the skillet. Use a slotted spoon to incorporate them well into the sauce, ensuring each piece of pasta is evenly coated. Add half of a bunch of fresh parsley, washed and finely chopped, mixing everything carefully to allow the flavors to meld.

Let everything cook for about a minute to allow the pasta to absorb the flavors of the sauce. After this time, transfer the pasta to plates and garnish with the remaining chopped parsley. This dish is perfect for a quick yet delicious dinner that will impress any guest. Enjoy the pasta with a drizzle of olive oil on top or with a sprinkle of parmesan if you desire an extra burst of flavor!
