Pork is cut into medium-sized pieces, ensuring they are uniform for even cooking. The onion is carefully peeled and sliced thinly, while the peppers are cut into rounds, which will add a sweet and sour flavor to the dish. The carrots, after being peeled, are grated on a large grater to better integrate into the mixture, and the mushrooms are cleaned and sliced, preparing them to release their aroma during cooking.

In a large skillet, the oil is heated over medium heat, and immediately after, the onion is added. It will start to sauté, releasing its aromas. Once the onion becomes translucent, the sliced peppers, grated carrot, and sliced mushrooms are added. The mixture is sautéed for a few minutes until all the vegetables change texture, becoming softer and more appetizing.

After the vegetables are sautéed, the pork is added, allowing it to brown slightly. Once the meat develops a nice crust, a cup of water is poured into the skillet. It is covered with a lid and left to simmer, so the flavors combine perfectly. It is important to check periodically, adding water if necessary, to prevent sticking.

When the meat and vegetables are well cooked, the vegetable seasoning, freshly ground pepper, and a tablespoon of tomato paste are added, which will provide a rich flavor and vibrant color to the dish. A little dried basil is sprinkled to bring a touch of freshness. Everything is mixed well, allowing it to simmer together for a few minutes.

Meanwhile, the mashed potatoes are prepared. The potatoes are peeled and cut into cubes, then boiled in a pot of salted water. Once they are soft, they are drained and mashed until they become a fine paste. Warm milk is added and whipped well with a whisk or mixer until a creamy and fluffy texture is achieved.

The dish is served with mashed potatoes alongside the meat and vegetable mixture, and a fresh sprig of basil can be added on top for an extra touch of appearance and flavor. This dish is perfect for a family meal, bringing together the flavor of pork and lovingly cooked vegetables.
