Zucchini and stuffed tomatoes, baked
Zucchini, versatile and delicious vegetables, are an excellent choice for preparing a healthy and tasty meal. Start by washing and drying the zucchinis well, then cut off the ends. Each zucchini is divided into two equal halves, and using a spoon, remove the pulp, being careful not to pierce the other end. This technique will create a small perfect container for the filling.
Tomatoes will add a fresh taste and a hint of acidity. Cut a small cap off the top of each tomato and scoop out the pulp, keeping them intact. In a pan, chop the onion finely. The bell pepper, diced, will bring a crunchy texture to the dish. Sauté the onion and bell pepper in a splash of oil until they become soft and fragrant, stirring occasionally to prevent sticking.
Once the vegetables are sautéed, add the minced meat, mixing well. Let the meat cook, stirring frequently, until the juices evaporate and the meat gets a slight browning. At this point, add a tablespoon of dehydrated vegetables for extra flavor, then season with salt and pepper to taste. Turn off the heat and add finely chopped greens, such as dill and parsley, which will give a fresh and aromatic touch to the dish.
Fill each half of zucchini and each tomato with the meat and vegetable mixture, being careful to pack it well. Carefully place them in a deeper baking dish to prevent the filling from spilling out. On top of each filling, crack a quail egg, which will bind the composition and give it an appetizing appearance.
The reserved tomato pulp, finely chopped, is poured into the baking dish, filling with water up to the level of the composition. Add a pinch of salt and a splash of oil to enhance the flavors. Now, the dish is ready to be placed in the preheated oven at 180 degrees Celsius. Let it bake for about 30 minutes, or until the zucchinis become tender and the quail eggs are well cooked.
