the moment it starts to steam. While the oil is heating up, the mussels are rinsed under a stream of cold water to remove any impurities or sand. It is important that the mussels are fresh, so you need to inspect them - those that do not close when touched should be discarded, as they are not edible.

After the mussels are cleaned and the oil is heated, a crushed clove of garlic and a few slices of onion are added to the pot, allowing them to sauté for about 2-3 minutes until they become translucent and release their aroma. At that point, you can add the mussels to the pot, carefully stirring them to coat with the flavored oil. Cover the pot with a lid and let the mussels cook for 5-7 minutes, shaking the pot occasionally to ensure that all the mussels open evenly.

When the mussels are open, add a glass of dry white wine and a pinch of salt, allowing everything to boil for a few minutes to let the alcohol evaporate and the flavors blend. You can also add a few sprigs of freshly chopped parsley, which will provide a fresh taste and vibrant color to the dish. After a few minutes, check the mussels; those that have not opened should be removed, while those that have opened are ready to be served.

To serve them, you can use a large bowl, adding the mussels to the bottom and drizzling them with the remaining flavored sauce from the pot. Garnishing with lemon slices and a few fresh parsley leaves will not only add a pleasant appearance but also an extra layer of flavor. This dish can be enjoyed alongside a fresh baguette to soak up the delicious sauce left in the bowl.
