- 6 eggs
- 200 g of salty telemea cheese (finely grated)

Preparation steps:

1. Preparing the dough:
In a bowl, combine the flour with the dry yeast and salt. Add the olive oil and start mixing. Begin to gradually add the warm water, kneading with the palm of your hand, just like for noodle dough. Knead until you obtain an elastic and homogeneous dough. It should be slightly sticky, but not excessively. Cover the bowl with a clean towel and let it rise for 20 minutes in a warm place to puff up.

2. Preparing the filling:
In a frying pan, heat a little olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent. If using frozen spinach, make sure it is thawed and well-drained. If using fresh spinach, wash it well and chop it. Add the spinach to the onion and stir constantly until it softens completely. Season with salt and pepper to taste. Let the mixture cool.

3. Combining the ingredients:

Let the tart cool slightly before cutting it. It can be served warm or at room temperature, alongside a fresh salad or a garlic yogurt sauce.
