Bird Soup
To prepare a chicken soup with vegetables that delights the taste buds, we start by cleaning the chicken. We carefully cut it into pieces, making sure to remove any unwanted fat or skin. We wash each piece under a stream of cold water to remove impurities. Then, we place the meat in a large pot, adding enough water to cover it completely. We bring it to a boil over medium heat.
As the water begins to boil, we will notice the formation of foam on top. This is normal and should be removed with a skimmer to achieve a clear and tasty soup. After cleaning the foam, we add the chopped vegetables. We recommend carrots, celery, and parsley, but you can experiment with your favorite vegetables, such as bell pepper or zucchini. We let it boil for about 10-15 minutes for the flavors to combine.
After this interval, we add the diced potatoes. The potatoes not only add consistency to the soup but also provide a pleasant sweet taste. We sprinkle in the broth to intensify the flavor, then add thyme, lovage, and dried parsley. These herbs will give the soup a distinctive aroma, typical of traditional dishes.
We let everything simmer on low heat, stirring occasionally to prevent the ingredients from sticking to the bottom of the pot. Once the vegetables and meat have cooked sufficiently, we add Delikat, an ingredient that will enhance the soup's taste. Now it's time to add the noodles, which will absorb the rich broth of the soup and fill with flavors. We let it cook for another 10 minutes.
To achieve a slightly sour soup, we add borscht or, for an extra flavor, magic borscht, depending on everyone's preferences. It is important to taste and adjust the salt, as each ingredient can influence the balance of flavors. After another 2-3 minutes of boiling, we turn off the heat and let the soup rest for a few moments.
We serve the soup hot, alongside a portion of steaming polenta and hot peppers, which will perfectly complement the dish. Don't forget to add a spoonful of sour cream for extra creaminess.
