Zucchini fritters
Zucchini, these versatile vegetables, are an excellent choice for a healthy and delicious snack. Start by washing the zucchinis well under a stream of cold water, making sure to remove any trace of dirt. Then, use a large-holed grater to shred them, resulting in thin strips that are easy to prepare. Place the shredded zucchini in a large bowl and sprinkle salt over them. Mix well with a wooden spoon, ensuring the salt is evenly distributed. Let the zucchini sit for 10 minutes, during which the salt will help remove excess water.
Meanwhile, wash the green onion and slice it into fine rings. This will add a touch of freshness and a pleasant flavor to your dish. In another bowl, beat the eggs with a whisk until frothy and smooth. After the waiting time, squeezing the zucchini is a crucial step; use a large piece of cheesecloth to press them, thus removing any excess liquid. This step will ensure that your dish does not become too wet.
Once the zucchini is well drained, add the green onion and beaten eggs. Season the mixture with salt and pepper to taste, then mix everything well to combine the flavors.
