The pig in the 'Salad Garden'
To prepare a delicious pork-based meal, we will start by taking care of the meat itself. It is recommended to prepare a larger quantity so that you can freeze the remaining portions and enjoy them later, thus saving time and energy in the kitchen. In a bowl, mix all the specific ingredients of the recipe, being careful to combine them well. It is important to set the meat and wine aside, as they will be added later.
After mixing the spices, wash the pork under a stream of cold water, then dry it with a paper towel, making sure it is well cleaned. Start the process of massaging the meat with the spice mixture, rubbing each part well to absorb the flavors. Once the meat is completely covered, wrap it in cling film and leave it in the refrigerator overnight to allow the spices to penetrate deeply.
The next day, take the meat out of the refrigerator, remove the cling film, and place it in a clay pot that you have previously soaked in warm water for an hour. Preheat the oven to a medium temperature. Add the wine over the meat, then cover the pot with an airtight lid to retain moisture and flavors during baking. Let the meat bake for 2-3 hours or until it becomes extremely tender.
After baking, remove the meat from the pot and place it on a plate. Using two forks, start shredding the meat into juicy strips. Separately, prepare the bacon slices, cutting them into small cubes and frying them until crispy. Once the bacon is ready, strain it and keep the oil to prepare the dressing.
In a large bowl, wash the salad well, separating the leaves and tearing them into smaller pieces. Place the salad in the serving dish. Add the thinly sliced radishes, diced bell pepper, finely sliced cucumber, crispy bacon pieces, olives, and cranberries. Mix everything carefully and let the mixture rest until serving.
At serving time, place the salad on two plates, drizzle it with the dressing of each person's choice, then add, according to preference, the shredded pork on top. Garnish with cranberries or cheddar/parmesan cheese for an extra touch of flavor. This dish is best enjoyed alongside a glass of sweet white wine, which will perfectly complement the rich flavors of the meat and the freshness of the salad. A meal that will delight any food lover!
