Smoked Salmon Potato Salad
To prepare a delicious potato and salmon salad, the first step is to deal with the potatoes. Wash the potatoes well under a stream of cold water to remove any impurities. Then, put them to boil in cold water, adding a teaspoon of salt. Boil them for about 10-15 minutes until they become slightly soft but not fully tender, to keep their shape. When ready, remove them from the water and let them cool slightly, then cut them into uniform cubes.
Meanwhile, let’s focus on the dressing that will give personality to the salad. In a small bowl, combine sour cream with a tablespoon of vinegar, a splash of extra virgin olive oil, and a teaspoon of Dijon mustard. Add a pinch of salt and pepper to taste and mix everything well with a fork until you achieve a creamy and homogeneous emulsion. Never underestimate the power of a well-made dressing; it can truly transform the salad.
Now, let’s take care of the herbs. Chop the dill finely, making sure to include only the tender leaves, which will add a fresh and vibrant flavor. Add the dill to the previously prepared dressing, gently mixing to distribute the flavors. Next, take an onion and slice it thinly; red onion can be an excellent choice for its sweetness, but you can also use white onion, depending on your preferences. Place the onion slices in a large salad bowl.
The cucumber also needs to be prepared. Partially peel it, leaving strips of skin for a contrast of color and texture. Slice it thinly and add it to the bowl along with the onion. Now, it’s time to add the boiled potatoes; make sure they have cooled enough to be handled. Add the potato cubes to the bowl along with the onion and cucumber.
Salmon is next on the list. Cut the salmon fillets into suitable pieces, depending on your preferences. Make sure the salmon is fresh, and its texture will blend perfectly with the other ingredients in the salad. Add the pieces of salmon to the bowl with the vegetables and potatoes.
Now, pour the dressing over the entire mixture in the bowl and gently mix with a spoon, being careful not to crush the potatoes. Taste the salad and, if necessary, adjust with a little salt or pepper. For an extra flavor boost, you can also add a few drops of lemon juice.
After you have mixed everything, cover the bowl with plastic wrap and let the salad sit in the refrigerator for 20-30 minutes. This resting time will allow the flavors to blend harmoniously. When you are ready to serve, take the salad out of the refrigerator and enjoy a healthy, tasty, and fresh dish. Bon appétit!
