Roasted Peppers with Sauce
This delicious onion sauce recipe with tomatoes and peppers is perfect for accompanying various dishes, from pasta to meat, or it can be served as is, alongside a slice of fresh bread. Start by peeling the onion, choosing a variety that you like, such as yellow or red onion, each having unique characteristics. After finely chopping the onion, place it in a large skillet along with 3-4 tablespoons of quality olive oil, which adds a special flavor. Sauté the onion over low heat, stirring occasionally to avoid frying it. The goal is for it to become glassy, which will enhance the aroma.
Meanwhile, take a cup of milk and dissolve a tablespoon of flour in it, mixing well to avoid lumps. Then add the sour cream, which will give the sauce a creamy texture and rich flavor. Continue to stir until the mixture becomes homogeneous. Once the onion has reached the desired consistency, pour the milk and sour cream mixture over it, stirring constantly to prevent sticking to the bottom of the pan. Let the sauce simmer over low heat, making sure to stir frequently until it thickens and becomes velvety.
Now it’s time to add the flavors. Season the sauce with dried basil, salt, and pepper to taste. The basil will provide a fresh and Mediterranean note, while the salt and pepper will balance the flavor. After mixing the spices well, chop a fresh tomato into cubes and add it to the sauce, allowing it to integrate for a few minutes. The tomatoes will bring an extra acidity and sweetness, perfectly complementing the sautéed onion.
To complete the dish, slice a few peppers, preferably red and green peppers, into thin strips. Add them to the sauce and let them cook together for about 5 minutes. This step will intensify the colors and flavors of the sauce, making it not only delicious but also visually appealing. Once the peppers have softened a bit and the sauce has reached the desired consistency, turn off the heat and the dish is ready to serve.
