Arpacas is a versatile and nutritious ingredient, perfect for preparing a healthy and delicious meal. We start by choosing the arpacas, ensuring that it is free of impurities. It is thoroughly washed in several waters, alternating between warm and cold water to remove any traces of dust or other particles. After this cleaning stage, the arpacas is transferred to a pot, and boiling water is poured over it, taking care to cover it completely. This blanching process is essential as it helps to activate the flavors and rehydrate the grains.

Once we have covered the pot with a lid, we let the arpacas sit in the heat, ideally leaving it overnight. The next day, it is boiled in the same water, but with a pinch of salt added. It is left to simmer for about 20-30 minutes, during which the arpacas will soften, bloom, and absorb a large part of the water. If, after boiling, we notice that there is still a lot of liquid left, it is good to strain the excess to achieve a pleasant texture.

In a heated pan with oil, finely chopped onion is sautéed until it becomes glassy, and then sliced mushrooms are added. They are sautéed together until the mushrooms are cooked and have absorbed the oil. At this point, we add diced bell peppers, allowing the mixture to simmer for a few moments so that the flavors combine harmoniously. At this moment, the starch mixed with the tomato paste and soup concentrate (vegetable stock) is added, adjusting the taste with salt and pepper to preference.

To assemble the dish, we take a baking dish that we grease with a little oil. We layer alternating layers of arpacas, followed by the mixture with bell peppers and mushrooms. We continue this process until all ingredients are used, making sure to finish with the mixture of bell peppers and mushrooms. On top, we pour the remaining tomato paste, which will add a note of freshness and flavor.

The dish is placed in the oven at a medium temperature for 20-30 minutes, during which the dish will gratin nicely, and the flavors will intensify. It is important to check from time to time to ensure that everything cooks evenly. Finally, we serve this delight warm, enjoying a healthy and tasty dish, perfect for any occasion. Bon appétit!
