As you may have deduced from the title, the recipe I will present is a modernized version of the famous Waldorf salad, known for its unique combination of flavors and textures. This salad has been reinterpreted over time and has enjoyed many variations, but the one I will share today is, in my opinion, the most successful. It is a simple, accessible salad, yet very healthy, perfect for any occasion. If you are looking for a dish that brings a touch of romance to the table, do not hesitate to prepare it.

The original recipe used celery stalks, but considering its strong taste, I opted for the white root. Personally, I prefer to use both parts to provide the salad with a variety of flavors. As for the dressing, the options are varied: some prefer mayonnaise, others yogurt or sour cream. After experimenting with all these variations, I realized that a sauce-dressing based on egg and sour cream is the most suitable, providing a pleasant consistency and a special taste.

For the sauce, you need an egg yolk, a tablespoon of oil, 100 ml of unsweetened whipped cream, a teaspoon of honey, salt, white pepper, and grated nutmeg. Whip the cream with the honey slightly to give it a consistency, then add the rest of the ingredients and mix gently. Let the sauce chill until ready to use.

The main ingredients for the salad are: half a celery stalk, a carrot, a Granny Smith apple, a piece of celery root, 4-5 leaves of romaine lettuce, roasted walnuts, and raisins. Don't forget to add the juice of a lemon, which will bring extra freshness and prevent oxidation.

Preparing the vegetables and the apple is an important part of the process. I prefer to cut them by hand to retain as many of their nutritional qualities as possible. Peel the vegetables and the apple, then sprinkle them with lemon juice to avoid oxidation. The raisins should be soaked in boiling water for 10 minutes, after which they are removed and dried on an absorbent towel. The walnuts are lightly roasted in a pan or in the oven to enhance their flavor.

The celery is cut into julienne, into thin strips, and the carrot can also be cut julienne or into fine rounds. The apple, peeled and cored, is diced. Don’t forget to sprinkle the apple with lemon juice as well. The celery stalk is finely chopped, and the lettuce leaves can be cut into strips about 1 cm wide.

After all the ingredients are prepared, gently mix them in a bowl, then place the portion on a plate or a serving platter. Sprinkle the raisins and walnuts on top, adding the sauce for extra flavor. Decorate the edges with lettuce leaves. This salad can be served with croutons or plain, being hearty enough to be an appetizer or a main course. At dinner, it is perfect as a single dish!
