Spinach is a nutrient-rich vegetable and an excellent choice for many dishes, and our spinach pie recipe promises to be a delight. We start by thoroughly washing the spinach under a stream of cold water to remove any impurities. Then, we heat a pan over medium heat and add a tablespoon of oil, along with 2-3 tablespoons of water or vegetable broth, depending on preference. We add the spinach and season it with salt and pepper to taste, allowing it to wilt until it softens and loses volume. Once the spinach is ready, we remove it from the pan and let it cool.

Meanwhile, we prepare the dough. In a bowl, we melt the butter together with the oil in the microwave, being careful not to let it boil. In a bread machine, food processor, or simply by hand, we mix the warm milk, water, salt, and flour, kneading until we achieve an elastic, soft, and non-sticky dough. It is important to let the dough rest for a few minutes to make it easier to handle.

We divide the dough into three equal pieces and, on a well-floured work surface, roll out each piece of dough into a thin sheet. We ensure to flour both the sheets and underneath them to prevent sticking. On the first sheet, we pour half of the melted oil and butter mixture. We place the second sheet on top and sprinkle crumbled cheese, which will add a savory taste to the dish. Over the cheese, we add the drained spinach, being careful not to leave excess liquid.

We cover everything with the third sheet, pouring the remaining melted oil and butter. We fold the sheets in half lengthwise, then in half widthwise, and using a rolling pin, we roll out the pie to fit the chosen baking tray. We place the pie on a tray lined with parchment paper, cut it into portions with a very sharp knife, and let it rise for about an hour.

To achieve a golden and appetizing crust, we brush the pie with beaten egg mixed with a little water and sprinkle sesame seeds, poppy seeds, or nigella seeds, depending on our preferences. We bake the pie in a preheated oven at 180-190 degrees Celsius for 25-30 minutes, until it becomes golden and crispy. We serve the pie warm, savoring every bite. Enjoy your meal!

 Ingredients: 350ml of milk, 100ml of water, 600g of flour, 1 teaspoon of salt, 100g of margarine (butter), 5 tablespoons of oil, 500g of fresh spinach, 500g of telemea (I used 200g of ricotta + 300g of feta), 7g of dry yeast, salt, pepper, 1 egg for brushing.
