Whole Wheat Rolls with Almonds and Poppy Seeds
In a large cup, add the warm milk, water, fresh yeast, and honey. Mix the ingredients well with a wooden spoon, ensuring that the yeast completely dissolves in the liquid. Let the mixture sit for 15 minutes, during which you will notice the yeast starting to form bubbles, a sign that it is active and ready to help the dough rise.
Meanwhile, in a generous bowl, combine the chosen flours, salt, and poppy seeds. The latter will not only add a pleasant taste but also a crunchy texture, being an inspired choice for rolls. After the dry ingredients are evenly mixed, pour in the yeast mixture, extra virgin olive oil, and using a fork, start forming a homogeneous dough.
When the ingredients are well integrated, transfer the dough to a lightly floured work surface and begin to knead. Kneading should take about 10 minutes, during which you will notice the dough becoming elastic and smooth. If you find the dough too sticky, sprinkle a little flour along the way, but avoid adding too much so as not to compromise the final texture of the rolls.
Once you have a well-kneaded dough, grease a large bowl with olive oil and transfer the dough inside, making sure it is covered on all sides with oil. Cover the bowl with a clean towel and let it sit in a warm place, away from drafts, for about 2 hours. After the proofing time has expired, divide the dough into 10 equal parts, rolling each portion between your palms to form balls. Place the formed rolls on a baking tray lined with aluminum foil, ensuring that you leave enough space between them (3-4 cm) to allow them to rise and bake evenly. Cover the tray again with a towel and let them sit for 10 minutes.
Meanwhile, preheat the oven to 190°C (gas 5). Once the rolls have risen a bit, brush them with beaten egg using a kitchen brush, and sprinkle almond slices on top for a crunchy and attractive appearance. Bake the rolls in the preheated oven for 18-20 minutes, until they are golden and well-baked.
After baking, remove the rolls from the oven and let them cool on a rack, at least to room temperature, before enjoying them. These rolls are perfect to be served plain, with butter, or alongside various fillings, offering a delicious culinary experience.
