Green bean, zucchini and pork stew

Green bean, zucchini and pork stew is served hot for lunch, with the juices poured over bread. The meat simmers until tender, while the green beans and zucchini soften in a stew with white wine, garlic and fresh dill. I choose pork shoulder with a little fat between the fibers. Prep: 20 minutes. Cook: 66 minutes. Total: 86 minutes. Serves: 4. Approximately 480 kcal and 39 g protein per serving.
Ingredients
- 30 ml olive oil
- 1 medium onion (150 g)
- 700 g pork shoulder for stew
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon ground white pepper
- 50 ml white wine
- 650 ml water
- 1 jar green beans (400 g drained)
- 2 small zucchini (400 g)
- 1 garlic clove
- 15 g fresh dill
Preparation
1. Finely chop the onion. Pat the meat dry with paper towels. Heat the olive oil in a heavy pot and cook the onion and meat for 8 minutes, until the onion softens and the meat is lightly browned. 2. Add the basil, salt, white pepper and wine. Simmer for 3 minutes, until most of the liquid has evaporated. 3. Pour in 400 ml water and simmer the meat for 30 minutes, until it starts to become tender. 4. Drain the green beans. Peel and seed the zucchini, then cut it into pieces about 2 cm across. Add the green beans and zucchini to the pot, pour in another 250 ml water and simmer for 15 minutes, until the zucchini softens. 5. Finely chop the garlic, add it to the pot and simmer for another 10 minutes. Turn off the heat and sprinkle with the chopped dill.
Notes
For a version with fresh green beans, use 400 g and cook them separately until tender before adding them to the pot. Store the dish in a sealed container in the refrigerator for up to 3 days. Small, firm zucchini have fewer seeds; if yours are larger, scrape out the soft center well, and the cooking time may be a little longer. I don’t rush the onion, I let it soften before pouring in the wine. Serve bread alongside to mop up the juices.
Frequently asked questions
Can I use pork leg instead of shoulder?
Yes. Use 700 g, cut into pieces about 3 cm across, and check whether it is tender after simmering for 30 minutes.
Why did the sauce turn out too thin?
Leave the pot uncovered over low heat for another 5-8 minutes, until the liquid reduces.
Can I leave the zucchini skin on?
Yes, if the zucchini are small, about 12-15 cm long, and have thin skin. Wash them well before cutting.
