Dissolve the yeast in warm water, making sure it is not too hot, so as not to destroy the active microorganisms. Add a teaspoon of sugar, which will help activate the yeast and contribute to an even rise of the dough. Once the yeast has completely dissolved and started to bubble, salt and gradually flour can be added. It is important to use quality flour that contains enough gluten to provide elasticity to the dough.

Knead the dough until it becomes smooth and elastic, a process that can take between 10 and 15 minutes. It is essential to knead it well, as this will help develop the gluten network, giving the desired texture. After the dough has been kneaded, form it into a ball, which will be left to rise in a bowl greased with a little oil, covered with a damp towel or plastic wrap. Let the dough rise in a warm place, away from drafts, for about an hour or until it doubles in volume.

Meanwhile, prepare the soy pieces, which will add extra protein and flavor to our dish. Boil some soy schnitzels in a pot of boiling water. It is recommended to boil them for 10-15 minutes, so they properly rehydrate and acquire a pleasant texture. After boiling, remove them from the water and let them cool slightly, then cut them into small pieces or crumble them, depending on your preference.

Once the dough has risen, divide it into equal portions, and each portion is rolled out into a round or square shape, depending on how you want to prepare them. In the center of each dough portion, add a portion of the previously prepared soy. You can also add spices or sauces to enhance the flavor, such as soy sauce, garlic, or spices to taste. Then, fold the dough over the filling, ensuring it is well sealed to prevent the filling from leaking during baking.

Preheat the oven to 200 degrees Celsius. Place the products on a baking sheet lined with parchment paper and let them rise for another 15-20 minutes. Before putting them in the oven, you can brush each piece with a beaten egg or milk to achieve a golden and shiny crust. Bake for 20-25 minutes until they become golden brown and fragrant. Once ready, remove them from the oven and let them cool slightly before serving. These filled dough products can be accompanied by a fresh salad or a spicy sauce, providing a delicious and nutritious meal.

 Ingredients: 500 g flour, a cube of yeast (25 g), warm water, a little sugar. For topping: mushrooms, olives, corn, soy, tomato sauce.
