Fried Liver
In search of the perfect chicken liver recipe, I came across a method from the southern United States that truly impressed me. This recipe, known as 'Southern Fried Livers,' promises a liver cooked with a pleasant texture and a savory taste, far from those that can be mushy. Although I haven't found the ideal recipe yet, this version has been among the most successful so far.
To start, it is essential to wash the chicken liver well to remove any impurities and provide a more pleasant texture. After washing, let it drain in a sieve or on a paper towel to eliminate excess water. In a large bowl, beat one egg with about 100 ml of milk. This combination will help tenderize the liver and create a delicious crust. Add the pieces of liver to the egg and milk mixture, ensuring each piece is well coated.
In a large plastic bag, add 200 g of flour, 1 tablespoon of garlic powder, salt, and pepper to taste. Mix the dry ingredients well so that the flavors combine evenly. Now, take each piece of liver from the egg and milk bowl and place it in the bag with the flour mixture. Close the bag and shake well so that the liver is completely coated in flour. This step is crucial because the crust will provide a crispy texture and exceptional flavor.
Although the traditional method requires deep frying, I opted for a healthier version by baking the liver. So, preheat the oven to 200 degrees Celsius and prepare a tray by adding a small amount of oil, enough to cover the bottom. When the oil is hot, carefully add the pieces of liver, making sure not to overcrowd them to allow for even browning.
Let the liver fry for about 15-20 minutes, turning it halfway through so that it browns on both sides. The golden and crispy color of the crust will be the sign that your liver is ready. Finally, remove it from the oven and let it rest for a few minutes before serving. This chicken liver pairs perfectly with a fresh salad or mashed potatoes, bringing a pleasant contrast to the plate.
