Recipe History
Puff pastry cups are a classic dish with roots in pastry traditions worldwide. Their origins are lost in the mists of time, but they have constantly evolved, adapting to local preferences and available ingredients. In this modern version, we chose to pay tribute to seasonal fruits and the creaminess of Milk Core, creating an irresistible combination.
Your Ingredients
- 1 sheet of puff pastry
- 200 g strawberries (choose the prettiest ones, with the stems intact for decoration)
- 151 g Milk Core Delaco (milk chocolate pieces add a note of sweetness and creaminess)
- 200 ml liquid cream (for an airy texture)
- 2 tablespoons powdered sugar
- 1 packet vanilla sugar
- 1 packet Strawberry Creme Ole (for an extra flavor)
- 1 egg yolk (to seal the edges of the cups)
- For decoration:
- 100 g milk chocolate (to coat the strawberries)
- 200 g strawberries (for decoration, in addition to those used in the cream)
Step by Step in Making the Cups
1. Preparing the Dough:
- Allow the puff pastry sheet to thaw completely. It is important that the dough is well thawed for easy handling.
- On a work surface, roll out the dough by hand, being careful not to stretch it too much to avoid losing its texture.
2. Cutting and Shaping the Cups:
- Cut the dough into perfect squares. Even if they are not perfectly uniform, the cups will turn out well, but a uniform appearance enhances the final presentation.
- Each square is cut along the edge by 1 cm, at two opposite corners diagonally, leaving the other corners intact. This will allow for the creation of decorative loops.
3. Forming the Loops:
- Grab the cut edges and place them on the uncut corner, forming a loop. Ensure that the edges are well adhered to the base of the cup using the egg yolk.
4. Baking:
- Place the cups on a baking tray lined with parchment paper. Brush the edges and loops with egg yolk, but do not brush the bottom.
- Prick the bottom of the tarts with a fork to prevent puffing.
- Preheat the oven to 200 degrees Celsius and bake for 15 minutes. Then, prick the bottom of the tarts again and reduce the temperature to 180 degrees, baking for another 15 minutes until golden and crispy.
5. Preparing the Strawberry Cream:
- Wash the strawberries well and remove the stems from 200 g. Place them in a bowl along with the Milk Core cut into pieces.
- Use a hand mixer to crush the strawberries and Milk Core. Add the powdered sugar, vanilla sugar, liquid cream, and Strawberry Creme Ole. Mix with a regular mixer until you obtain a thick cream (about 3-4 minutes). Refrigerate the cream.
6. Preparing the Decoration:
- Dry the strawberries with stems for decoration.
- Melt the milk chocolate in the microwave, being careful not to burn it. Coat each strawberry in melted chocolate and place them on a tray lined with parchment paper. Put them in the fridge to harden the chocolate.
7. Assembling the Cups:
- Once the cups have cooled, fill them with the strawberry cream.
- Decorate with chocolate-coated strawberries, Milk Core, and a few fresh strawberries.
8. Serving:
- The cups can be kept in the fridge until serving. They are perfect to be enjoyed alongside a cup of iced tea or fresh lemonade.
Useful Tips:
- Choosing Strawberries: Always opt for fresh, firm, and fragrant strawberries. Quality strawberries will make a difference in the final dish.
- Cream Texture: If you want an even airier cream, you can also add some whipped cream.
- Variations: Instead of strawberries, you can use other seasonal fruits, such as raspberries or blueberries, for a different version.
