- 1 packet vanilla sugar
- A pinch of salt

For Cream 1:
- 300 ml whipped cream
- 300 g dark chocolate (minimum 50% cocoa)
- 1 tablespoon cognac

For Cream 2:
- 3 eggs
- 150 g sugar
- 150 g butter
- 75 g cocoa
- 1 tablespoon cognac
- 1 teaspoon grated orange zest

In addition:
- 500-600 ml sour cherry juice
- 200 ml sour cherry liqueur
- 400 g pitted sour cherries

Preparing the Base

1. Preparing the ingredients: Start by preparing all the necessary ingredients. Make sure the eggs are at room temperature to achieve a fluffy base.

2. Sifting the ingredients: In a large bowl, sift the flour and cocoa together. This step is essential to avoid lumps and ensure a fine texture.

3. Beating the egg whites: In another bowl, beat the egg whites with half of the sugar and a pinch of salt until they become firm. This step will add air to the mixture, contributing to a light texture.

3. Assembling the cake: Place the first part of the base in the baking pan you used, soak it well, add the sour cherries (either whole or halved), and spread the first cream. Continue with another base, soak it, add the second cream, and finally place the last part of the base and soak it again.

4. Cooling: Cover the cake with plastic wrap and refrigerate for at least 2 hours or even until the next day to allow the flavors to meld.
