Dough: In a large bowl, start by mixing the flour with the ground nuts and baking powder. It is important that these ingredients are homogeneous to ensure an even texture of the dough. Once you have obtained a homogeneous mixture, add the butter cut into small cubes, sugar, and egg yolk. Use your hands to knead the ingredients well, so that the butter integrates perfectly into the flour. It is normal for the dough to be crumbly at first, so don't get discouraged; continue kneading for about 15 minutes until you obtain a non-sticky and homogeneous dough.

After you finish kneading, divide the dough into two equal parts. Form two balls that you will wrap in plastic wrap. They will need a resting period in the freezer for 20 minutes, followed by another 10-15 minutes in the refrigerator. This step is essential for achieving a crispy texture of the pie.

Filling: In the meantime, prepare the apple filling. Wash the apples well, peel them, and grate them using a coarse grater. Mix them with sugar, so they sweeten and release their natural juice. This mixture will add moisture and flavor to your pie.

Take the dough out of the freezer and place a baking tray on the table, lined with parchment paper. Grate the first ball of dough on the coarse grater and evenly distribute the dough over the entire surface of the tray, being careful not to press too hard to maintain an airy texture.

On top of the layer of dough, add the grated apples, making sure to drain them well of excess juice. This will prevent the pie from becoming too wet. Then, grate the second ball of dough over the apples, forming a generous layer. Finally, evenly sprinkle the 4-5 tablespoons of ground nuts, which will add extra flavor and texture.

Preheat the oven to a medium temperature and place the tray inside. Let the pie bake for about 40 minutes, or until it turns golden and browned on top. When ready, take the tray out of the oven and let it cool slightly before cutting. Enjoy!
