Creamy arugula soup

Creamy arugula soup is served hot with croutons and makes a light lunch. The peas and potatoes make it hearty, while the sour cream gives it a smooth texture; raw arugula adds a peppery, green note. I like it on the thick side and serve the croutons separately so they stay crunchy. Preparation: 15 minutes. Cooking: 39 minutes. Rest: 15 minutes. Total time: 69 minutes. Serves: 4. Approximately 425 kcal and 12 g protein per serving.
Ingredients
- 400 g green peas
- 200 g celery root
- 1200 ml water
- 2 medium sweet or regular potatoes (300 g)
- 1 teaspoon salt
- 1 teaspoon dried marjoram
- 300 ml sour cream 20% fat
- 50 g arugula
- 100 g croutons
Preparation
1. Take the sour cream out of the fridge 15 minutes beforehand. Put the peas and peeled, sliced celery root in a pot with 1200 ml water. Boil for 20 minutes, until the peas are almost tender. 2. Peel and slice the potatoes, then add them to the pot. Boil for another 15 minutes, until the vegetables are soft. 3. Add the salt and marjoram, then let the soup simmer gently for 2 minutes. 4. Put the vegetables and about 600 ml of the cooking liquid in a blender. Stir a few spoonfuls of hot soup into the sour cream, then add it to the blender and blend everything until smooth. If everything won't fit in the blender jug, work in batches. 5. Pour the soup into a small saucepan and warm it over low heat for 2 minutes, stirring. Gradually add the remaining cooking liquid until it reaches the consistency you like. 6. Finely chop the arugula. Divide the soup between bowls and sprinkle the arugula and croutons on top.
Notes
With fresh peas, the cooking time may be longer if the peas are large and mature; add frozen peas straight to the water without thawing. If everything won't fit in the blender, blend the vegetables in two batches and divide the sour cream between them. The sour cream and croutons contain dairy and gluten; for a gluten-free version, use 100 g certified gluten-free croutons. A simple green salad goes well alongside. Keep covered in the fridge for up to 3 days.
Frequently asked questions
Can I use regular potatoes?
Yes, use the same amount and the soup will taste less sweet.
How do I get a completely smooth texture?
After blending, pass the soup through a fine-mesh sieve to catch the pea skins.
Can I replace the arugula with another green?
Yes, you can sprinkle 50 g raw baby spinach on top; it will taste less peppery.
What should I do if the peas are still firm after boiling?
Boil them for another 5 minutes before adding the potatoes, then continue with the next step.
