Autumn-scented zucchini soup

Add the homemade noodles to autumn-scented zucchini soup when the broth is bubbling, and cook them for about five minutes. The zucchini and other vegetables stay in chunks, and fresh basil gives it a subtle aroma; I serve it in small bowls before the noodles get too soft. Prep time: 15 minutes. Cook time: 30 minutes. Total time: 45 minutes. Servings: 6. Approximately 220 kcal and 7 g protein per serving.
Ingredients
- 5 small slender zucchini (approx. 750 g)
- 2 tablespoons oil
- 1 medium carrot (80 g)
- 1 medium parsnip (100 g)
- 1 medium yellow onion (150 g)
- 80 g celery root
- 1 medium red pepper (150 g)
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 2000 ml vegetable broth
- 200 g dried homemade noodles
- 15 g parsley
- 5 g fresh basil leaves
Preparation
1. Cut the zucchini into medium-sized cubes and put them in a pot with 2 tablespoons of oil. Cover and cook for 5 minutes, until they release their juices. 2. Chop the carrot, parsnip, onion, celery root and red pepper. Add them to the zucchini and cook for another 5 minutes, stirring now and then; the vegetables will start to soften. 3. Season with salt and pepper, then pour in the vegetable broth. Cook over medium heat for 15 minutes, until it starts to boil and the vegetables are soft. 4. Add the noodles and cook for another 5 minutes, until softened. 5. Chop the parsley and fresh basil, sprinkle them over the soup and serve it warm. It can also be eaten cold.
Notes
A piece of bread goes well with this soup, especially when you serve it as a main course. Small, firm zucchini have finer flesh; with large ones whose seeds are well formed, scoop out the soft middle before cutting them. If the meal is delayed, the noodles soak up the broth and the soup thickens, like an ordinary noodle soup left in the pot. I halve the amounts when cooking for three servings, and for six I put the pot on the table as soon as the noodles have softened. Keep the soup in the fridge for no more than 3 days.
Frequently asked questions
Can I use large zucchini?
Yes. Scoop out the part with the large seeds and cut the flesh into cubes about 2 cm across.
Can I use fresh noodles?
Yes, but add 200 g to the pot 2 minutes before turning off the heat and check that they are soft.
Can I replace the noodles with rice?
Use 100 g of short-grain rice and cook it in the soup for about 18 minutes, until softened.
