Rice in tomato sauce

Rice in tomato sauce is cooked separately, then mixed in the pan with tomato sauce, onion and carrot. The grains stay soft and whole, and the browned garlic leaves a gentle note in the sauce. With rice, I pay most attention to the grains: I like them to stay whole, not split. Preparation: 10 minutes. Cooking: 36 minutes. Total time: 46 minutes. Servings: 4. Ingredients
- 1500 ml water
- 1 teaspoon salt
- 300 g rice
- 1 tablespoon olive oil
- 1 garlic clove
- 1 small onion (100 g)
- 1 medium carrot (60 g)
- 400 g tomato juice
- 5 g fresh basil or 1 g dried basil (optional)
Preparation
1. Bring 1500 ml water to a boil in a pot. Add 1 teaspoon salt and the rice, then cook for 15 minutes, until the grains are tender but still hold their shape. 2. Heat the olive oil in a pan. Fry the whole garlic clove for 30 seconds on each side, until browned, then remove it. 3. Finely chop the onion and carrot or pulse them in a food processor. Cook them in the same pan for 2 minutes, stirring, until slightly softened. 4. Pour in the tomato juice, cover the pan and cook the sauce for 15 minutes over medium heat, until gently bubbling. 5. Drain the rice and add it to the pan. Mix well, cover and cook for another 3 minutes over medium heat. If using basil, add it at the end.
Notes
I don't rush the 2 minutes of cooking: the onion and carrot should soften a little without taking on any color. If the tomato juice is watery, I let the sauce simmer uncovered for another 3-4 minutes before adding the rice. I serve it with a green salad. It keeps in the fridge in a sealed container for up to 3 days. Dried basil goes straight into the pan, while I tear fresh basil over the top at the end.
Frequently asked questions
Can I use long-grain rice?
Yes. Cook it for 2 minutes less than the time on the package, then let it finish cooking in the sauce.
What should I do if the grains are still hard after cooking?
Add 30 ml hot water and keep the pan covered over low heat for another 2 minutes.
Can I chop the onion and carrot in a food processor?
Yes. Use short pulses until you have pieces of about 3 mm, without turning them into a paste.
