Cauliflower with tomatoes

Cauliflower with tomatoes is cooked covered, until the florets soften and the sauce thickens. Red onion, cherry tomatoes and tomato paste make a tender stew with garlic and basil, served warm. I choose a cauliflower with tight florets, not loose ones. Prep: 15 minutes. Cook: 33 minutes. Rest: 10 minutes. Total time: 58 minutes. Servings: 4. About 155 kcal and 6 g protein per serving.
Ingredients
- 1 kg cauliflower
- 1000 ml cold water for soaking
- 1 teaspoon salt for soaking
- 1 large red onion (200 g)
- 2 tablespoons olive oil
- 150 ml water for cooking
- 6 cherry tomatoes
- 2 tablespoons tomato paste
- 1/2 teaspoon salt
- 1 teaspoon Vegeta seasoning
- 1/2 teaspoon ground pepper
- 1/2 teaspoon sweet paprika
- 1/2 teaspoon dried basil
- 1 garlic clove
- 15 g fresh or frozen parsley
Preparation
1. Break the cauliflower into small florets and put them in 1000 ml cold water with 1 teaspoon salt for 10 minutes. Drain. 2. Finely chop the onion and sauté it in 2 tablespoons olive oil for 5 minutes, until softened. Add 50 ml water and cook for another 3 minutes. 3. Add the cauliflower, the 6 cherry tomatoes cut into quarters and 100 ml water to the saucepan. Cover and cook for 10 minutes, until the tomatoes start to soften. 4. Add 2 tablespoons tomato paste, 1/2 teaspoon salt, 1 teaspoon Vegeta seasoning, 1/2 teaspoon pepper, 1/2 teaspoon sweet paprika and 1/2 teaspoon dried basil. Cover and cook for another 15 minutes, until the cauliflower is easily pierced with a fork. 5. Finely chop the garlic, add it to the saucepan with the parsley and stir.
Notes
I serve it with polenta. Florets of a similar size soften at about the same rate; larger ones may need a few extra minutes, while very small ones break apart more easily. Choose ripe but firm cherry tomatoes; if they release a lot of juice, the sauce will be thinner. I time it so it’s ready when we sit down to eat, because the sauce thickens as it cools. It keeps in the fridge for up to 3 days; if the sauce gets too thick when reheated, add 1-2 tablespoons water.
Frequently asked questions
Can I use frozen cauliflower?
Yes, put 1 kg straight into the saucepan and extend the final cooking time by 5-8 minutes; check a piece before turning off the heat.
What should I do if the sauce is too thin?
Let it simmer uncovered for another 4-5 minutes, until it reduces.
Can I replace the cherry tomatoes with regular tomatoes?
Yes, cut 150 g tomatoes into pieces and add them to the saucepan instead of the cherry tomatoes.
Can I use tomato juice instead of tomato paste?
Yes, add 100 ml tomato juice and cook uncovered for another 5 minutes, so the sauce thickens.
