To prepare a delicious dish with spinach and cheese, start by sautéing the julienned onion in a pan with heated oil. Choose a non-stick pan to prevent the ingredients from sticking. Sauté the onion over medium heat, stirring constantly, until it becomes translucent and fragrant. This step is essential to release all the flavors of the onion, which will add depth to the dish.

Once the onion is ready, add the well-drained fresh spinach. Make sure the spinach is well-wrung, as excess water will dilute the mixture. Season with salt and pepper to taste, being careful not to overdo it, as the mix of dehydrated vegetables you will use will also add a note of flavor. Incorporate this mix, stirring continuously with a wooden spoon, until all the liquid released by the spinach has evaporated. This is a crucial step, as a mixture that is too wet can affect the final texture of the dish.

Once the mixture is ready, remove the pan from the heat and add the finely chopped herbs, such as dill or parsley, according to your preferences. Allowing the mixture to cool slightly will prevent the cheese from coagulating when adding the warm ingredients. Now, prepare the slices of bread, which you will soak in milk and then drain well to avoid adding excessive moisture to the mixture.

In a separate bowl, grate the cheese and beat the egg whites with a pinch of salt until they form stiff peaks. This will give the dish an airy texture. Carefully incorporate the soaked bread slices, cheese, and beaten egg whites into the spinach mixture, stirring gently until everything is homogeneous.

Prepare two small baking molds, greasing them with butter and lining them with breadcrumbs to prevent sticking. Divide the mixture evenly between the two molds, and on top, use a spoon to create a small indentation in each portion, where you will add an egg yolk. This will give an attractive appearance and rich flavor when baked.

Baked at 180 degrees Celsius for about 20 minutes, your dish will become golden and appetizing. When ready, take them out of the oven and let them cool slightly before serving. Enjoy your meal! This recipe is ideal for a family meal or to impress friends at a dinner.
