To prepare a delicious vegetable soup, we start by ensuring that we have all the fresh ingredients at hand. We will use leeks, carrots, turnips, potatoes, and zucchini, each bringing a distinct note of flavor and texture to this dish. First, we clean and wash all the vegetables. The leeks are sliced into thin rounds, the carrots are grated or cut into small cubes for even cooking, while the turnips and potatoes are cut into similarly sized cubes. The zucchini, due to its delicate texture, will also be cut into cubes, ensuring that it will soften quickly during boiling.

Green beans, an essential ingredient of this dish, are cut into pieces of 3 or 4 cm so that they retain their shape and provide a crunchy texture in the soup. Once all the vegetables are chopped, we add them to a large pot. It is important to choose a pot large enough to allow the vegetables to cook evenly. We cover the vegetables with water, being careful not to exceed their level, and add a tablespoon of oil to enhance the flavors. Finally, we season with vegetable seasoning and salt to taste, being careful not to overdo it, as the vegetables will also bring a note of natural sweetness.

We cover the pot with a lid and let it boil over medium heat. It is essential to check the soup periodically, ensuring that the vegetables do not stick to the bottom of the pot and that they cook evenly. Once the vegetables are cooked and a fork easily pierces them, it is time to move on to the final step. Using an immersion blender or a mixer, we will puree all the vegetables until we obtain a fine and homogeneous cream. If you prefer a less fine texture, you can leave some larger pieces of vegetables.

After achieving the desired consistency, the soup is ready to be served. We can cool it slightly and, before serving, we can add, if desired, some croutons or a tablespoon of sour cream for extra flavor. This vegetable soup is not only healthy but also comforting, perfect for chilly days or when we need a boost of energy. Enjoy your meal!
