Wash the spinach well under cold running water, ensuring that you remove any impurities. Then, in a large pot, add salted water and bring it to a boil. Once the water starts to boil, add the spinach and let it blanch for 10 minutes. This step will help improve the color and texture of the spinach. After the time is up, remove the spinach from the water and place it in a colander to drain well. Once it has cooled slightly, chop it finely, being careful not to leave large pieces.

In a heated pan, add a little oil and sauté the chopped spinach over medium heat. After a few minutes, add the flour dissolved in a cup of water, stirring constantly to prevent lumps from forming. Let the mixture thicken, stirring occasionally, to achieve a uniform consistency. After a few minutes, add a tablespoon of tomato paste, season with salt and pepper, then set the spinach aside to cool.

Meanwhile, place the soybeans in a pot with water and add a little Delicat seasoning. Boil the soybeans for 10 minutes until they become soft, then drain them in a colander. In another pan, add a little oil and sauté the finely chopped onion and grated carrot. Once the onion becomes translucent, add the boiled soybeans and tomato paste, seasoning with salt and pepper to taste. Let it simmer on low heat for 10-15 minutes, stirring occasionally to prevent sticking.

Prepare a baking dish by greasing it with margarine, ensuring it is evenly coated. Start by adding a layer of spinach to the dish, then pour all the soy mixture on top. Cover with another layer of remaining spinach, ensuring that all ingredients are well distributed. Preheat the oven to 180 degrees Celsius and place the prepared dish inside. Bake for 20 minutes until the surface becomes slightly golden and appetizing.
