To prepare a delicious potato salad with bacon and fresh vegetables, start by washing the potatoes thoroughly under a stream of cold water, ensuring you remove any impurities or dirt. Once done, place them in a pot with cold water and add a teaspoon of salt. Put the pot on the heat and let the potatoes boil. When the water starts to boil, reduce the heat and let them cook for about 15-20 minutes, depending on their size. Personally, I prefer to boil them for exactly 15 minutes to keep them slightly firm and not fall apart. After they are cooked, remove them from the water and let them cool slightly.

Meanwhile, prepare the bacon slices. Place them on a tray and put them in the preheated oven at 190 degrees Celsius. Let them brown for 15-20 minutes until they become crispy and golden. Once cooked, remove them and place them on an absorbent napkin to eliminate excess fat.

Now it’s time to prepare the dressing, which will give the salad a special flavor. In a container, combine olive oil, red wine vinegar, mustard, mayonnaise, a little salt, and pepper to taste. Mix the ingredients well with a fork until they are homogeneous. Once the dressing is ready, place it in the refrigerator for a few minutes so that the flavors blend better.

When the potatoes have cooled sufficiently, cut them into larger cubes, adding the halved bell peppers of various colors – red, orange, and yellow, for extra color and flavor. Slice the radishes thinly, and chop the red and green onions finely. Put all these ingredients in a large bowl, ensuring they are evenly distributed.

Pour the cold dressing over the ingredients in the bowl and gently mix with a spoon, being careful not to crush the potatoes. Once the bacon has cooled, chop it finely and add it to the salad, mixing again. Let the salad sit in the refrigerator for 30 minutes, so the flavors combine and become even more delicious.

When serving, portion the salad onto plates and garnish with a little crispy bacon and fresh green onion. This salad is perfect as an appetizer or as a light main dish, being full of flavors and textures. Enjoy your meal!
