Eggplant Salad with Yogurt (Borani Bademjan)
Boranis is a delicious Iranian salad that adds a touch of flavor and freshness to any meal. It is essential to choose fresh eggplants, but if they are not available, the frozen version is an excellent and easier option from a calorie standpoint. If you want a healthier version, I recommend baking the eggplants in the oven. This method will not only reduce the amount of absorbed oil but will also enhance the flavor of the eggplants.
Once the eggplants are prepared, we chop them finely and let them cool. In a large bowl, we combine the eggplants with Greek yogurt, which adds a special creaminess to the dish. Then, we add crushed garlic, which provides an extra flavor and a slightly spicy taste. It is important to adjust the composition with salt and pepper to taste, to achieve a perfect balance between the flavors of the ingredients.
An essential element of boranis is the crushed nuts, which we sprinkle on top of the dish.
