Okra stew with tomatoes

Okra stew with tomatoes is simmered in a tomato sauce, with the okra staying tender and whole. The sauce is mellow, and the small pods keep their shape on the plate. I choose the smallest ones I can find, with smooth green skins. Prep: 20 minutes. Cook: 49 minutes. Total time: 69 minutes. Serves: 4. Approximately 265 kcal and 8 g protein per serving.
Ingredients
- 1 kg okra
- 1500 ml water
- 1 tablespoon salt
- 2 tablespoons vinegar
- 3 tablespoons oil
- 1 medium onion (150 g)
- 1 kg tomatoes
- 1 tablespoon oil
- 1 teaspoon Mirodenia
- 1 teaspoon salt
- 30 g parsley
Preparation
1. Wash the okra and trim the stems as close to the caps as possible, without cutting into the part with the seeds. 2. Bring 1500 ml of water to a boil with 1 tablespoon of salt and 2 tablespoons of vinegar. It should take about 8 minutes to come to a boil. 3. Add the okra and simmer over low heat for 10 minutes. Check if it has softened; if it is still firm, cook it for another 5 minutes. Drain. 4. Chop the onion and sauté it in 3 tablespoons of oil for 8 minutes, until softened and slightly translucent. 5. Cut the tomatoes into quarters and bring them to a boil with 1 tablespoon of oil. Cook for 8 minutes, until they start to soften, then peel them. 6. Add the drained okra and tomatoes to the sautéed onion. Simmer everything for 10 minutes, then add 1 teaspoon of Mirodenia and 1 teaspoon of salt. Sprinkle with the chopped parsley.
Notes
Small, green, firm pods work best; large, pale-green ones have bigger seeds and can stay stringier. I don't rush the trimming: I cut off just the stem tip and leave intact the part where the seeds could spill out. If the fresh tomatoes are very juicy, the sauce will be thinner; you can use 1 kg of canned tomatoes instead. I serve it with mămăligă, Romanian polenta. The size of the okra changes the cooking time, so check it after the first 10 minutes. Keep the stew covered in the fridge and eat it within 3 days.
Frequently asked questions
Can I use frozen okra?
Yes, use 1 kg of frozen okra, thawed and well drained before you put it on to boil.
Can I use cherry tomatoes too?
Yes. Cut 1 kg of cherry tomatoes in half and cook them until they start to soften.
What should I do if the sauce is still too runny?
Let it simmer uncovered for another 5 minutes so some of the liquid can evaporate.
Why are the seeds coming out of the okra?
Usually, the stem has been cut too deeply. Remove just the tip, without opening the top of the pod.
