Spaghetti with Prague ham

Spaghetti with Prague ham are boiled pasta topped with a spicy ketchup, butter and ham sauce, brought together with hot water. Oregano is stirred into the sauce, which stays creamy and thick enough to cling to the pasta without completely covering it. I serve them on flat plates, with the ham rounds left visible. Prep: 5 minutes. Cook: 31 minutes. Total: 36 minutes. Serves: 3. About 550 kcal and 25 g protein per serving.
Ingredients
- 250 g spaghetti
- 2 l water
- 1/2 teaspoon salt
- 1/4 teaspoon fine salt
- 1/2 teaspoon Vegeta
- 250 g Prague ham
- 50 g butter or margarine
- 3 tablespoons spicy ketchup
- 1 teaspoon oregano
- 100 ml hot water
- 1/4 teaspoon chili flakes (optional)
- 1/2 hot pepper (optional)
Preparation
1. Pour 2 l of water into a saucepan, add 1/2 teaspoon of salt and bring to a boil over medium-high heat for 10 minutes. 2. Break the spaghetti in half and cook in the boiling water over medium heat for 15 minutes, until tender. Drain, then toss with 1/4 teaspoon of salt and 1/2 teaspoon of Vegeta. 3. Slice the ham into rounds. Melt the butter in a frying pan over medium heat for 1 minute, then add the ham, oregano and ketchup. 4. Pour in 100 ml of hot water and stir continuously for 5 minutes, until the liquid has reduced and the sauce is creamy. For more heat, add 1/4 teaspoon of chili flakes or 1/2 chopped hot pepper. 5. Put the spaghetti on a flat plate and spoon the ham sauce over the top.
Notes
For a dairy-free version, replace the butter with 50 g of margarine; regular pasta contains gluten. I serve them with a tomato salad. Firmer Prague ham keeps its round slices intact, while a wetter one may release liquid into the pan. If the sauce is still too thin, leave it on the heat for another 1-2 minutes. Store leftovers in a sealed container in the fridge for up to 3 days.
Frequently asked questions
Can I cut the ham into cubes instead of rounds?
Yes. Cut the ham into cubes of about 1 cm and add it to the pan at the same point.
How can I cook the spaghetti without breaking it?
Use a tall saucepan and hold the spaghetti upright in the water. After the first minute, the ends soften and you can push them into the water.
Can I use sweet ketchup instead of spicy ketchup?
Yes, keep the 3 tablespoons of ketchup and add 1/2 chopped hot pepper to the sauce.
What should I do if the sauce turns out too salty?
The ham and Vegeta can make the sauce salty; try 1/4 teaspoon of Vegeta first, then add more only after tasting.
