Penne is a type of pasta that pairs perfectly with a variety of sauces and ingredients, and the recipe we are proposing today is delicious and easy to make. We start by boiling the penne in a pot of boiling water with plenty of salt. It is important to cook them for 7-8 minutes so that they remain al dente, meaning slightly firm to the bite. Once the cooking time has expired, we drain the pasta well and let it cool a little. In a large bowl, we mix the penne with two beaten eggs, adding a little Delikat for a more intense flavor, as well as dried tarragon, which will add a special aroma to our dish.

In a pan, we put a few tablespoons of oil and sauté the finely chopped onion until it becomes glassy and transparent, at which point its aroma will fill the kitchen. At this point, we add the thawed spinach, which we have drained well of water. We mix the ingredients and season them with Delikat, ground pepper, and sweet or spicy paprika, depending on personal preferences. After the spinach has wilted slightly and the flavors have combined, we let the mixture cool down a bit, and in the meantime, we beat an egg with a whisk to incorporate it into the spinach.

We prepare a loaf pan that we grease with a little oil and line with breadcrumbs to prevent sticking. We start assembling the dish: we put a first layer of penne, followed by a generous layer of sautéed spinach. On top, we place the remaining penne, thus creating a kind of pasta lasagna. We preheat the oven to 180 degrees Celsius and place the pan in the oven, letting it bake for about 20 minutes. It is important to watch for the moment when the penne on top become golden and slightly crispy.

After it has baked, we take the pan out of the oven and let the dish cool a bit before cutting it into thicker slices. It can be served warm, but also cold, making it an excellent choice for a snack or a light lunch. Finally, we sprinkle fresh dill on top, which will add a touch of freshness and a pleasant appearance to our tasty dish. This recipe is not only simple but also versatile, easily adaptable based on available ingredients or personal preferences. Enjoy your meal!
