Macaroni with cottage cheese

Macaroni with cottage cheese combines cooked pasta with cottage cheese and sour cream, while the garlic and ham are first fried in oil. It turns out creamy, with little pieces of ham; my mum made it without a recipe when she wanted to get cooking over with quickly. I choose fine-curd cottage cheese, not a very creamy kind. Prep: 20 minutes. Cook: 24 minutes. Rest: 10 minutes. Total time: 54 minutes. Serves: 4. Approximately 710 kcal and 32 g protein per serving.
Ingredients
- 400 g pasta
- 2500 ml water
- 2 tablespoons oil
- 3 garlic cloves
- 4 thin slices of homemade ham (100 g)
- 400 g cottage cheese
- 250 g sour cream with at least 20% fat
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 1 tablespoon chopped dill
Preparation
1. Bring 2500 ml of water to a boil. Cook the pasta for 20 minutes or as long as the package says, until tender but still holding its shape, then drain. 2. Take the sour cream out of the fridge 15 minutes before using it. Peel the garlic, cut the ham into very small dice and mash the cottage cheese with a fork. 3. Heat 2 tablespoons of oil in the same pot. Add the crushed garlic and ham, then cook for 3 minutes, stirring, until the ham starts to brown. 4. Add the cooked pasta and cottage cheese to the pot. Stir 2 tablespoons of the warm mixture into the sour cream, pour it into the pot and heat everything over low heat for 1 minute, without letting it boil. 5. Add 1/2 teaspoon of salt, 1/4 teaspoon of ground pepper and 1 tablespoon of chopped dill. Stir and set the pot aside for 10 minutes.
Notes
For a gluten-free version, use 400 g of gluten-free pasta and follow the package cooking time; the cottage cheese and sour cream are still dairy. Store leftovers in a sealed container in the fridge for up to 3 days. A simple green salad goes well on the side. If the cottage cheese is watery, drain it first, and if the ham is salty, reduce the added salt. Grandma also used fatback, but it sits too heavily in my stomach.
Frequently asked questions
Can you use ricotta instead of cottage cheese?
Yes, replace the 400 g of cottage cheese with 400 g of ricotta; the mixture will turn out smoother.
Can you use fatback instead of ham?
Yes, you can add 100 g of diced fatback and brown it in the oil for 2-3 minutes.
Can you cook fresh pasta too?
Yes, put 400 g of fresh pasta in boiling water and cook for 2-4 minutes, until tender.
Why might the sour cream split?
It can happen if it goes in cold while the mixture is very hot; first stir 3 tablespoons of the warm pasta into it, then add it to the pot.
