Gnocchetti in white sauce

Pasta/Pizza - Gnocchetti in white sauce by Alice M. - Recipia

Gnocchetti in white sauce cook in 5-6 minutes and are usually served hot for lunch. Butter, cream and melted cheese come together in a creamy sauce, topped with grated cheese. I eat them while they’re still hot, before the sauce thickens. Prep: 2 minutes. Cook: 11 minutes. Total time: 13 minutes. Serves: 2. About 420 kcal and 12 g protein per serving.

Ingredients

  • 200 g gnocchetti
  • 1000 ml water
  • 1 teaspoon salt
  • 20 g butter
  • 60 ml cream
  • 1 slice melted cheese (20 g)
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 50 g grated cheese
  • 5 g fresh parsley (optional)

Preparation

1. Bring 1000 ml water to a boil; this takes about 5 minutes. Add 1 teaspoon salt. 2. Add the gnocchetti to the boiling water and cook for 5-6 minutes, until they rise to the surface. Set aside 2 tablespoons of the cooking water, then lift them out with a slotted spoon. 3. Melt the butter in a pan over low heat for about 1 minute. Add the cream and melted cheese and stir for 4 minutes, until you have a creamy sauce. Season with 1/4 teaspoon salt and 1/4 teaspoon pepper. 4. Add the gnocchetti to the pan and toss them in the sauce. Add the grated cheese and, if you like, the chopped parsley.

Notes

Keeps in the fridge for up to 3 days in a sealed container; the sauce may thicken when reheated. Cooking times for gnocchetti vary by brand, so follow the package if it gives a different time. If the slice of melted cheese is salty, use less salt in the sauce and adjust it at the end. I serve them with green salad; the soft texture reminds me of macaroni and cheese. The cream can be replaced with 60 g cream cheese, and you can add 5 g fresh parsley on top; the dish contains dairy, and gnocchetti may contain gluten or egg, depending on the brand.

Frequently asked questions

Why does the sauce turn grainy?

Take the pan off the heat and stir 1 tablespoon of hot water from the reserved cooking water into the sauce.

Can I use larger gnocchi?

Yes. Cook them until they rise to the surface, then leave them for 1 more minute and check that they’re tender.

Does the sauce work with pasta too?

Yes, use 200 g short pasta and cook it according to the package directions. Save 2 tablespoons of pasta water for the sauce.
