A hearty Sunday menu is the perfect opportunity to impress guests and create unforgettable memories around the table. This Beef Wellington recipe, inspired by culinary traditions, has been passed down through generations and has a remarkable story, supported by its rich aroma and delicious texture. Each bite promises an explosion of flavors and textures, while the side of green beans and sweet-sour peppers perfectly complements the main dish. Let’s begin the culinary adventure!

Preparation time: 1 hour
Baking time: 30 minutes
Total time: 1 hour and 30 minutes
Number of servings: 4

Ingredients

For Beef Wellington:
- 4 pieces of beef (preferably tenderloin, approx. 150-200 g each)
- 1 large onion
- 1 bunch of green onions
- 5-6 mushrooms (preferably champignon or shiitake)
- 2 packs of frozen dough
- 200 g prosciutto crudo
- 2 tablespoons of sour cream
- A handful of fresh dill, finely chopped
- Olive oil
- 2 eggs (for brushing the dough)
- Salt and pepper (to taste)

For the side:
- 200 g frozen green beans
- 2 red bell peppers
- 2 orange bell peppers
- Olive oil
- Apple cider vinegar
- 1 tablespoon of sugar
- Butter
- 2 cloves of garlic

Instructions

Step 1: Preparing the meat

1. Start by seasoning each piece of beef with salt and pepper, or your preferred spices.
2. In a non-stick skillet, heat a tablespoon of olive oil over medium heat.
3. Add the meat and sear it well on all sides, about 4-5 minutes, until browned. This process helps seal in the juices.
4. Once all the pieces are seared, remove them to a plate and let them cool.

Step 2: Preparing the filling

1. Finely chop the large onion and green onions.
2. In the same skillet, add a little olive oil and sauté the onion until translucent, about 3-4 minutes.
3. Add the diced mushrooms and let them sauté with the onion until all the water released by the mushrooms evaporates.
4. Add the sour cream and chopped dill, seasoning with salt and pepper to taste. It's important not to overdo the salt since the prosciutto is already salty.
5. Once the mixture is ready, let it cool.

Step 3: Preparing the side

1. Start with the frozen green beans. Place them in a non-stick skillet with butter, covering with a lid. Let them cook over medium heat for 5-7 minutes, stirring occasionally.
2. Meanwhile, peel and slice the garlic. Add it to the skillet with the green beans and continue to sauté for another 5 minutes.
3. For the sweet-sour peppers, slice them into strips. In another skillet, heat 2 tablespoons of olive oil, add the peppers, and sauté until they become slightly soft.
4. Add a tablespoon of sugar and a tablespoon of apple cider vinegar, mixing well. Let it cook until the vinegar evaporates and the peppers become glazed, about 2-3 minutes.

Step 4: Assembling the Beef Wellington

1. Meanwhile, thaw the dough and cut it into two pieces.
2. On a work surface, roll out one piece of dough as thin as possible.
3. In the center of the dough, layer 3 slices of prosciutto, followed by 2 tablespoons of the mushroom mixture, and then a piece of seared meat.
4. Cut the corners of the dough in a cross shape, making sure not to damage the structure.
5. Brush the edges with beaten egg to help seal them.
6. Fold the edges over the filling to form a “wallet” and turn it over with the folded side down on a baking tray lined with parchment paper.
7. Repeat the process for all pieces of meat, using the remaining dough to create rolls with prosciutto and cheese, if desired.

Step 5: Baking

1. Preheat the oven to 200°C.
2. Place all the prepared items on the prepared tray, brushing them with beaten egg for a glossy finish.
3. Don’t forget to make a small hole in the center of each Beef Wellington to allow steam to escape; otherwise, they risk becoming soggy.
4. Bake for 25-30 minutes, or until golden and crispy.

Serving

Serve the Beef Wellington alongside the garlic green beans and sweet-sour peppers. These vibrant colors and varied flavors will delight your guests. The prosciutto and cheese rolls can be served as an appetizer or snack, perfect at any time of the day.

Useful tips

- Choose the meat carefully: Opt for quality beef, as the flavor will be decisive in the dish. Buy from a trusted butcher.
- The dough: Make sure the dough is well-thawed, but don’t let it sit too long at room temperature to avoid becoming soggy.
- Vegetarian option: You can replace the beef with a mix of vegetables and cheese, and omit the prosciutto for a completely vegetarian version.

Frequently asked questions

1. Can I use another type of meat? Yes, you can experiment with pork or chicken, but make sure to adjust the cooking time accordingly.
2. How can I store the recipe for the next day? Beef Wellington stores well in the fridge, but it is recommended to reheat it in the oven to maintain the crispy texture of the dough.
3. What other sides can I try? A creamy mashed potatoes with butter and sour cream or grilled vegetables are excellent options.
