Pork is cut into slices about 1 cm thick, ensuring that each piece is uniform for even cooking. The lemons are squeezed well, extracting the fresh juice, which will add a pleasant acidity to the dish. In a large bowl, the wine is mixed with freshly ground pepper, 3/4 of the lemon juice, the 4 grated apples, including their skins, and a generous amount of salt. This mixture will create a flavorful marinade, perfect for penetrating the pork. It is mixed well with the meat slices, ensuring that each piece is evenly coated with the marinade. Once everything is mixed, the bowl is covered with plastic wrap and left in the fridge for 4 hours, allowing the flavors to develop and penetrate the meat.

Meanwhile, we prepare the other apples. They are cut in half, the seeds are removed, and each half is cut into 4 pieces. In a pot, the 80 ml of water and the remaining lemon juice are added, then the apple pieces are placed in. The pot is covered and placed on low heat, allowing the apples to simmer for 15 minutes. This process will make the apples soft and release their juices, creating a delicious base to accompany the meat.

After the marinade has rested in the fridge for enough time, the oven is preheated to 230 degrees Celsius. A baking tray is greased with the 50 ml of oil, which will help achieve a nicely browned crust on the meat. The marinated meat slices are carefully placed in the tray, and the marinade is poured evenly over them. The tray is placed in the oven and left to bake for 1 hour and 20 minutes. It is important to turn the pieces of meat 2-3 times during baking to ensure even cooking and pleasant caramelization.
