Meatballs with vegetables and sauce

Meatballs with vegetables and sauce are served hot, with the spicy tomato sauce on the side. Grated zucchini, carrot and pepper bind the meat, and the browned meatballs make a hearty lunch alongside the sweet-and-spicy sauce. I dice the pepper small so you can taste it among the other vegetables without it taking over the texture. Prep: 20 minutes. Cook: 25 minutes. Rest: 5 minutes. Total time: 50 minutes. Servings: 4. Ingredients
For the meatballs
- 500 g ground pork and beef
- 1 small zucchini (150 g peeled)
- 1/2 bell pepper (75 g)
- 1 small carrot (50 g)
- 3 garlic cloves
- 1 egg
- 4 g fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 2 tablespoons breadcrumbs
- 45 ml oil for frying
For the sauce
- 1 medium onion (150 g)
- 3 garlic cloves
- 2 tablespoons olive oil
- 500 ml tomato passata
- 2 hot pepper rounds (5 g)
- 1/2 teaspoon salt
- 5 g fresh parsley
- 1 teaspoon honey
Preparation
1. Peel the pepper, carrot and zucchini. Dice the pepper and carrot, grate the zucchini and crush the 3 garlic cloves for the meatballs. 2. Put the ground meat in a bowl and add the zucchini, pepper, carrot, garlic, egg and 4 g chopped parsley. Season with 1 teaspoon salt and 1/2 teaspoon pepper, knead well, then work in the breadcrumbs. 3. Shape into round meatballs of similar size. Heat 45 ml oil in a frying pan and fry them for 12 minutes, turning until browned and cooked through. 4. Peel the onion and the 3 garlic cloves for the sauce, then grate them finely. Heat 2 tablespoons olive oil in a saucepan and sauté the onion and garlic for 1 minute, until translucent. 5. Pour in the tomato passata and add the hot pepper rounds. Simmer the sauce for 12 minutes, until it thickens a little, then add 1/2 teaspoon salt and the chopped parsley. 6. Take the sauce off the heat and leave it to cool for 5 minutes. Add the honey and stir gently, then serve with the meatballs.
Notes
I serve them with polenta or bread, so you can mop up the sauce on your plate too. They keep in a covered container in the fridge for up to 3 days; you can make the sauce a day ahead and reheat it gently. For the mixture, pork and beef with a little fat stay softer than very lean meat, which can dry out when fried. A small, firm zucchini without soft spots is easy to grate; if it releases a lot of liquid after grating, squeeze it out before mixing it in. If the hot pepper is very strong, start with just one round and taste the sauce before adding more. Gluten-free breadcrumbs can be used in the same amount, 2 tablespoons; the meatballs contain egg, and regular breadcrumbs contain gluten.
Frequently asked questions
Can I use only beef?
Yes, choose ground beef with about 15% fat; very lean meat can dry out more easily when fried.
Why do the meatballs fall apart when I turn them?
Leave them for 3 minutes on the first side before moving them, so they form a crust and turn more easily.
What should I do if the sauce is too watery?
Simmer it uncovered for another 5 minutes, until it reduces and thickens.
Can I bake them instead of frying them?
Yes, place them on baking paper and cook at 200°C for 20-25 minutes, until browned and cooked through.
