Preparation:
1. Start by preparing the ingredients. Wash the chicken meat well under cold running water and then cut it into suitable pieces. If using thighs, there is no need to remove the skin, as it will add extra flavor to the stew.
2. In a deep skillet, heat the oil over medium heat. Add the chicken pieces and fry them for 5-7 minutes until they are slightly browned on the outside. It is important not to overcrowd the pan, so if you have many pieces, you can fry the meat in two batches.
3. Meanwhile, peel and finely chop the onion. I recommend using sweet onion, which will provide a natural sweetness to the dish. Add the onion to the skillet over the fried chicken and sauté everything together until the onion becomes translucent, about 5-7 minutes.
4. Peel the carrots and cut them into rounds, and you can cut the bell peppers into cubes. Add the carrots and bell peppers to the skillet, mixing well. Let the vegetables sauté together with the onion and meat for another 5 minutes.
5. After the vegetables have softened, add the water and season with salt and pepper to taste. Cover the skillet with a lid and let the stew simmer on low heat for 30-40 minutes. This step is essential for the flavors to blend and the meat to become tender.
6. Finally, taste the stew and adjust the seasoning if necessary. If you find that the sauce is too liquid, you can leave the skillet uncovered for a few minutes to evaporate the excess water.
