Chicken Livers with Broccoli Puree
In a larger pot, we add water and a teaspoon of salt, then bring to a boil chopped broccoli florets. We let it boil for 10-12 minutes until it becomes soft but retains a pleasant texture. It is essential not to overcook it to avoid losing nutrients and color. After boiling, we drain the broccoli and let it cool. This step is important as it will help us achieve a fine and creamy puree.
Meanwhile, in a larger skillet, we add a little olive oil and let it heat over medium heat. When the oil is hot, we add finely chopped onion and crushed garlic. We sauté these ingredients for a few minutes until they become translucent and their aroma fills the kitchen. Then, we add cleaned chicken liver cut into small pieces. We let the liver cook, stirring occasionally, until it becomes tender and browns evenly, about 15-20 minutes.
In the last minutes of cooking, we season the livers with salt, pepper, and thyme, making sure to mix well so that the flavors integrate perfectly. This combination of spices enhances the rich taste of the liver and adds a touch of freshness.
Once the broccoli has cooled, we put it in a blender along with a piece of butter and a little salt to enhance the flavor. We blend everything until we achieve a fine and creamy puree, which will perfectly complement the chicken livers.
