Start with the dough, mixing all the ingredients above until you obtain a smooth and elastic dough. It is essential to knead well to activate the gluten in the flour, which will contribute to the final structure of the product. Once you have achieved a uniform consistency, shape the dough into a nice ball. Grease it with a little oil to protect it from drying out and to facilitate rising. Wrap it in plastic wrap or a damp towel and let it rise in a warm, draft-free place for about an hour or until it doubles in volume.
Meanwhile, prepare the desired filling. You can choose a combination of cheese, spinach, mushrooms, or even meat, depending on personal preferences. Make sure the ingredients are finely chopped and cooked, so they do not contain excess water that could affect the dough's texture. If you opt for cheese, a mixture of cottage cheese and feta cheese, with the addition of herbs such as dill or oregano, will create a delicious filling.
After the dough has risen, sprinkle a little flour on a clean surface and roll it out with a rolling pin until you get a thin sheet. Cut the dough into circular shapes using a glass or a cookie cutter. Place a tablespoon of the chosen filling in the center of each circle and fold the edges to form a half-moon. Press the edges well to seal the filling, ensuring it will not leak during baking.
Once you have filled all the shapes, place them on a baking tray lined with parchment paper. Let them rise for another 20-30 minutes to increase even more. Preheat the oven to 180 degrees Celsius. Before placing the tray in the oven, brush each piece with a beaten egg or milk to achieve a golden and appetizing crust. Bake for 25-30 minutes or until they become nicely browned.
After baking, let them cool on a rack. These delicious snacks are perfect both warm and cold, having an irresistible aroma and a crispy texture. Enjoy them alongside a fresh salad or as an appetizer at a festive meal!
