Wafer sheet cheesecake

Wafer sheet cheesecake comes out of the molds only after cooling, once the cheese filling has set and the wafer sheets are in place. Between them are cheese and semolina, with a whole strawberry, while the chocolate sets into a thin edge. When I buy cottage cheese, I check the whey first and choose a well-drained one. Preparation: 25 minutes. Cooking: 23 minutes. Resting: 40 minutes. Total time: 88 minutes. Servings: 4. Approximately 350 kcal and 8 g protein per serving.
Ingredients
- 1 wafer sheet
- 175 g cottage cheese
- 3 tablespoons sugar
- 1 egg
- 2 tablespoons semolina
- 1 teaspoon Dr. Oetker vanilla extract
- 4 strawberries
- 100 g chocolate
- 60 ml strawberry sauce
Preparation
1. Cut the wafer sheet into 4 circles using a round cutter. 2. Mix the cottage cheese with the sugar, egg, semolina and vanilla extract until smooth. 3. Place one wafer circle in each small round oven-safe mold. Add a spoonful of cheese, one whole strawberry, then cover with cheese and another wafer circle. 4. Bake for 20 minutes at 180°C, until the filling is set around the edges. Leave the cakes to cool in the molds for 30 minutes, then remove them. 5. Melt the chocolate for 3 minutes in a double boiler. Spread it in strips on parchment paper and place the strips around the cakes. Leave the chocolate to set for 10 minutes, then peel off the paper. Serve with strawberry sauce.
Notes
Keep covered in the fridge for up to 3 days. Well-drained cheese keeps the filling more compact; if it's wet, leave it in a sieve for a little while. Choose small strawberries that fit between the layers of filling. Serve cold with black tea. The strawberries can be left out; the wafer sheets contain gluten, and the cakes contain dairy and egg.
Frequently asked questions
Can I use frozen strawberries?
Yes, thaw them in a sieve for 45 minutes and pat them dry before assembling; otherwise they release too much liquid.
Why is the filling still soft?
The cheese may contain a lot of whey; add 1 tablespoon of semolina and leave the mixture for 8 minutes before putting it in the molds.
Can I replace the cottage cheese with ricotta?
Yes, use 160 g well-drained ricotta so the filling isn't too soft.
