Quick plum cake

Quick plum cake has a soft sponge, with the whipped egg whites folded in at the end. The plum halves sit on top, cut side up, and the vanilla comes through subtly in the golden sponge. I choose plums that are still firm, with unbroken skins. Preparation: 20 minutes. Cooking: 40 minutes. Resting: 30 minutes. Total time: 90 minutes. Servings: 12. About 550 kcal and 9 g protein per serving.
Ingredients
- 8 eggs
- 500 g sugar
- 2 ml vanilla extract
- 200 ml oil
- 200 ml milk
- 10 g baking powder
- 450 g flour
- 1 g salt
- 15 ml oil for the pan
- 15 g flour for the pan
- 21 medium plums
- 20 g powdered sugar
Preparation
1. Preheat the oven to 180°C. Separate the egg yolks from the whites. 2. Beat the egg yolks with the sugar and vanilla until pale. Gradually mix in the oil and milk. 3. Add the baking powder and flour gradually, mixing until the batter is smooth and lump-free. 4. Beat the egg whites with the salt until stiff peaks form. Fold them into the batter with broad strokes until it remains light and airy. 5. Grease the pan with the oil for the pan and sprinkle it with the flour for the pan. Pour in the batter, then arrange the plum halves on top, cut side up. 6. Bake for 40 minutes, until the sponge is golden and a toothpick comes out clean. Let the cake cool for 30 minutes, dust it with powdered sugar and cut it into pieces.
Notes
Use a 30 × 40 cm pan; in a smaller one, the thicker layer may need a few extra minutes in the oven. Choose ripe but still firm plums, since very soft ones release more juice into the sponge; cut large, juicy ones into quarters. Serve a slice with black tea. Keep it covered in the fridge for up to 3 days. The milk can be replaced with 200 ml unsweetened soy drink; the cake contains eggs and gluten, and the version made with milk also contains dairy.
Frequently asked questions
Why did the sponge turn out dense?
The egg whites can deflate if they are mixed into the batter too vigorously. Fold them in in 3 batches, using broad strokes.
Can I use frozen plums?
Yes, let them thaw and drain for 30 minutes before placing them on the batter.
What should I do if the toothpick comes out with wet batter?
Leave the cake in the oven for another 5 minutes, then check the center of the sponge again.
Can I use apricots instead of plums?
Yes, use 10-12 medium apricots, cut in half.
