To prepare a delicious and healthy dessert, we start with a rich and creamy semolina pudding. In a pot, we add 1 liter of milk, which we bring to a boil over medium heat. When the milk starts to boil, we gradually add 150 g of semolina, stirring continuously to avoid lumps. Once the semolina is well incorporated, we add 100 g of sugar and the grated zest of an orange, which will give our dessert a wonderful fragrance. We continue to stir until the mixture thickens and the semolina becomes soft and creamy. Once we achieve the desired consistency, we take the pot off the heat and let the semolina cool completely to allow the flavors to develop.

In the meantime, we take care of the cheese. In another bowl, we place 250 g of cottage cheese, which we can easily mash with a fork to achieve a fine texture. We add 100 g of raisins, which we have soaked in warm water for 10 minutes, then drain well. These will add a sweet note and a pleasant aroma to the mixture. After the semolina has cooled, we gradually add it to the cheese, mixing well until we obtain a uniform and consistent paste. It is important to ensure that all the ingredients are well integrated so that every bite is an explosion of flavors.

Once the mixture is ready, we start shaping it. With wet hands, we form balls of suitable size, about the size of a walnut. We place each ball on a tray, and then roll them in shredded coconut or ground nuts to give them an attractive appearance and a crunchy texture. This step not only enhances the appearance of the dessert but also the final taste.

After we finish shaping all the balls, we put them in the refrigerator for about an hour so that they firm up a bit and the flavors meld together. This dessert is ideal for both kids, due to the healthy ingredients, and adults, bringing a touch of childhood nostalgia. When they are ready, we can serve them as is or alongside a cup of yogurt for an extra touch of freshness. Enjoy every bite of this treat that combines the sweet taste of raisins with the fresh aroma of orange in a simple and delicious way!

 Ingredients: 500 grams of sweet cheese, 6 tablespoons of powdered sugar, zest of one lemon, 2 packets of vanilla sugar, 300 ml of milk, 4 tablespoons of semolina, raisins, 400 grams of ground walnuts (I used coconut), optional ground almonds (I replaced with chocolate flakes)
