Filling: Start by sautéing the chopped onion and garlic in 3 tablespoons of sunflower oil over medium heat. It is important to stir constantly to prevent burning until they become translucent and aromatic. Then, add the chopped sorrel and diced bell pepper. Sauce: In a bowl, grate a fresh cucumber, sprinkle it with a little salt, and let it sit for 10 minutes to release its juice. After it has sat, squeeze the cucumber well to remove the excess water, and then mix it with thick yogurt and a clove of garlic pressed through a garlic press. The sauce should be kept in the fridge until serving to cool and blend the flavors. Finally, it can be garnished with diced red pepper and fresh herbs for a colorful and appetizing appearance.
